Quick and Easy Recipes for National Peach Month

August is National Peach Month! You don’t have to be a 5-star chef to create something delicious with these sweet fruits. Start by heading to the grocery or the farmers’ market to stock up, and then get creative!

One of the best ways to enjoy fresh peaches is also the easiest. Simply top a bowl of vanilla ice cream with sliced peaches. For a healthier option, substitute plain yogurt for ice cream. Add sliced almonds for an extra special touch.

Believe it or not, peaches make a terrific addition to salads. Try various combos to see which you like best. Mix up arugula, chopped peaches, feta cheese and chopped cucumbers and top with Italian dressing. Or try a combination of spinach, chopped peaches, chopped tomatoes and goat cheese, finished with a balsamic vinaigrette.

Pro tip: grill the peaches for fabulous flavor.

Peaches and cream —it’s really a thing. Cut up some peaches, place them in a mixing bowl, then add 2 tablespoons of sugar and ¼ cup of cream per peach. Mix gently and let it sit for about 10 minutes. Divide among serving bowls and enjoy.

Switch out your usual tomato salsa for one made with peaches. Remove the pit from 3 medium peaches, then dice them up. Toss with ½ cup finely chopped red onion, ½ cup diced tomatoes, ¼ cup chopped cilantro leaves and half of a chopped serrano chile. Add in 2 tablespoons of fresh lime juice, 1 teaspoon of salt and ¼ teaspoon of chili powder, then mix well and enjoy!

For baked peaches, simply cut the peaches in half, remove the pits and place the peach halves in a baking dish, cut side up. Add about a teaspoon of salted butter to each half. Sprinkle with a mixture of brown sugar and cinnamon. Add chopped walnuts, if you like, and bake at 375 degrees for about 10 minutes.

How does a peach smoothie sound? Slice up a fresh peach and toss it in the blender. Add some frozen fruit — bananas work really well. Pour in whatever liquid you like, such as milk, almond milk or yogurt. Customize your smoothie to your taste by adding ginger, honey, protein powder, cinnamon or vanilla.

For peach cobbler, start with 1 cup of self-rising flour in a bowl. Add ¾ cup sugar and ¼ cup melted butter; mix well. Peel and slice 5-6 peaches and mix the slices with ½ cup of sugar. Put the peaches in a 9x13 baking pan and top with the flour mixture. Bake at 400 degrees for 40-45 minutes.
